Ascend Prime Steak & Sushi has introduced Aburi-Robata, a new sushi bar experience that highlights traditional Japanese culinary techniques through a 12-course tasting menu, available exclusively on the 31st floor in Downtown Bellevue.
The new experience showcases the methods of robata, or fireside cooking, and aburi, or searing by flame, in a menu presented in five movements. The tasting explores flame-kissed nigiri, binchotan robata, and refined coastal flavors.

- Aburi Hokkaido hotate featuring miso scallop, yuzu blanc, and iberico crumb

"We built our Aburi‑Robata experience to showcase the beauty of traditional Japanese fire techniques through a modern lens and chef-led storytelling," said Brandon Muehl, Ascend Prime's culinary director. "The goal isn’t to reinvent the wheel — it’s to respect the lineage of aburi and robata while giving guests a rare, front‑row view of how precision and flame transform ingredients.”
8 Reservations Available Every Tuesday
With only eight seats available every Tuesday at 6pm, guests are invited into a rare culinary moment where fire, seasonality, and storytelling take center stage, set at the sushi bar in the heart of the restaurant.
This new experience is priced at $250 per person, with beverage pairings available for an additional purchase. Reservations are sold out for Ascend's first seating next week, but more dates are available through May 19 and can be made at ascendprime.com or HERE.
